Have you ever tried a papaya?

My first time was when we vacationed in Bali and it seemed to be the star of most fruit platters. The flavor was a little unique at first and I couldn’t decide if I loved it or hated it. I’m kind of a watermelon and cantaloupe kind of girl, but I must admit this juicy, tropical fruit is growing on me.

Not only is papaya sweet, juicy and tender, it’s also super healthy! Serious bonus.

Papaya is packed with Vitamins A, C and K, and also boasts plenty of fiber, potassium, and folate. If the health perks still don’t win you over, try cantaloupe instead! It works beautifully in this recipe as well.

This recipe may be my simplest yet! I don’t know where the concept originates from, but it’s essentially a fruit bowl of goodness.

Simply halve your papaya or cantaloupe, scoop out the seeds, and top with whatever you can round up!

Banana ice cream
Coconut yogurt
Kiwi
Cherries
Blueberries
Chia seeds
Hemp seeds
Slivered almonds

These are so versatile you can easily adjust your fixings to suit your tastes.

Tropical papaya boats with loads of topping options! Load your fruit with coconut yogurt or banana ice cream and go to town with fruit, seeds and nuts! A healthy, plant-based breakfast or snack.

Ingredients
  • 1 ripe papaya or cantaloupe, halved, seeds removed
  • 1 cup Banana Ice Cream or Flavored Dairy-free Yogurt (I love blueberry coconut yogurt from Trader Joe's)
  • 1 kiwi, skin removed and chopped
  • 1/2 cup cherries, pitted and halved
  • 1/4 cup blueberries
  • 2-3 Tbsp slivered almonds
  • 1 Tbsp chia seeds
  • 1/2 Tbsp hemp seeds
  • Granola (see all of my granola recipes)
Instructions
  1. To make banana ice cream (instead of using dairy-free yogurt), add 2 ripe, previously sliced and frozen bananas to a blender or food processor and blend on low until a creamy ice cream consistency is reached. Scrape down sides as needed, and add a splash of almond milk if it has trouble blending.
  2. To assemble papaya (or cantaloupe) boats, simply fill the hollow centers with desired amounts of banana ice cream or coconut yogurt, fruit, nuts and seeds!
  3. Enjoy immediately - best when fresh.

I had the best sangria (and patatas bravas) of my life when we went to Spain in 2013.

Perhaps my recollection of that first drink is slightly biased. We’d just arrived to Barcelona from a long, tiring train ride, and then walked what seemed like miles carrying 40-pound backpacks into the city to reach our AirBnB. We were tired and hangry, to say the least.

Our first thought upon dropping our bags was “tapas and sangria.” So off we went in search of sustenance, and what we found was glorious.

Can we all just agree the Spanish do it well, “it” being everything?

Traditionally the Spanish enjoy coffee in the morning, work a little, take an afternoon rest (or siesta), work a little more, then retire in the evening by eating tapas and drinking good wine with the people they love. Eventually, they slumber only to do it all over again the next day. If that doesn’t sound like a slice of heaven, I don’t know what does.

Oh, and did I mention they gifted the world with sangria? Does it get any better than this lush, fruity beverage? I think not.

Though there are many interpretations of what “traditional sangria” is, I’ve found that it typically requires these main components:

Fruit (like apples and oranges)
Orange juice
A sweetener (like brown sugar or cane sugar)
A liquor (like brandy or rum)
Bold, fruity, dry Spanish red wine (like Tempranillo, Garnacha, or other Rijoa wine)
& Ice (for chilling)

For this version, I went with brandy because as soon as I smelled it, I immediately thought, “this smells like sangria!” But of course, if you’d rather use rum, be my guest.

Ingredients
  • 1/2 apple, cored, skin on, chopped into small pieces
  • 1/2 orange, rind on, sliced into small pieces, large seeds removed (plus more for garnish)
  • 3-4 Tbsp (41-55 g) organic brown sugar (or 3 Tbsp (37.5 g) organic cane sugar)
  • 3/4 cup (180 ml) orange juice, plus more to taste
  • 1/3 cup (80 ml) brandy, plus more to taste
  • 1 750 ml bottle dry Spanish red wine*
  • Ice to chill (~1 cup)
Instructions
  1. Add apples, oranges and sugar to a large pitcher and muddle with a muddler or wooden spoon for 45 seconds.
  2. Add orange juice and brandy and muddle again to combine for 30 seconds.
  3. Add red wine and stir to incorporate, then taste and adjust flavor as needed. I added a bit more brandy, orange juice and brown sugar. Stir to combine.
  4. Add ice and stir once more to chill. Serve as is, or with a bit more ice. Garnish with orange segments (optional).
  5. Store leftovers covered in the refrigerator for up to 48 hours, though best when fresh.
Notes
*For red wine, I bought the Albero Spanish Red Wine 2014 Monastrell from Trader Joe’s. However, any fruity, full bodied, somewhat-dry red Spanish wine will do.

Can I talk to you about salad, and also, life?

First, salad. No one should be forced to have a conversation on an empty stomach.

This salad is an adaptation of one I’ve been making recently for friends when hosting. It’s so simple in nature you likely already have most of the ingredients on hand right now (the best kind of recipe, in my opinion).

Peppery arugula is combined with crisp apples, toasted pecans, red onion, and dried cranberries, and it’s all dressed with a bright, vibrant lemon vinaigrette.

Plus, just 15 minutes (!!) and 8 basic ingredients to prepare – my idea of salad perfection.

This would make the perfect light and healthy dish to help you fill up on plants and erase some of that pie guilt likely lingering from yesterday’s feast. We’ve all been there. Salad to the rescue.

Now, life.

This time of year, everyone tells you to be thankful for what you have. I agree. Slow down, be grateful – it’s good for the soul.

But what about when life is hard, or things don’t go the way you planned, or something happens and your sense of reality shifts? What then?

2015 was perhaps my most personally challenging year yet, one wherein things didn’t go ‘as planned’ for me. I was left feeling a little sad and angry and frustrated, and just generally not like myself (what a bizarre sensation). It all made me realize I’m not as strong or spontaneous or resilient as I thought I was. In short, this year kind of kicked my ass.

The gritty details aren’t the important part. The important part is, I think it’s OK to be sad, or angry, or disappointed, or tired, or whatever it is you’re feeling right now that’s not radiant joy. It doesn’t mean you’re not thankful. It just means you’re giving yourself permission to feel your feelings (which is perfectly healthy, by the way). And it’s OK if what comes out isn’t all roses and sunshine.

My encouragement is, cry it out if you need to. No one’s looking anyway. And while you’re at it, eat some pie and hug your mom. I’ve found these to be equally sufficient remedies.

A healthy, hearty fall salad with peppery arugula, crisp apples, and toasted pecans. Dressed in a simple, vibrant lemon vinaigrette, it makes the perfect light-yet-satisfying plant-based meal or side.

Serves: 2 as an entrée, 4 as a side
Ingredients
SALAD
  • 1/2 cup (50 g) raw pecans
  • 7 ounces (198 g) arugula (organic when possible)
  • 2 small apples (1 tart, 1 sweet), peeled, quartered, cored and thinly sliced lengthwise
  • 1/4 red onion, thinly sliced
  • optional: 2 Tbsp (20 g) dried cranberries
DRESSING
  • 1 large lemon, juiced (~3 Tbsp, 45 ml)
  • 1 Tbsp (15 ml) maple syrup
  • Pinch each sea salt + black pepper
  • 3 Tbsp (45 ml) olive oil
Instructions
  1. Preheat oven to 350 degrees F (176 C) and arrange pecans on a bare baking sheet.
  2. Bake pecans for 8-10 minutes, or until fragrant and deep golden brown. Remove from oven and set aside.
  3. While pecans are toasting, prep remaining salad ingredients and add to a large mixing bowl.
  4. Prepare dressing in a mixing bowl or mason jar by adding all ingredients and whisking or shaking vigorously to combine. Taste and adjust flavor as needed.
  5. Add pecans to salad and top with dressing. Toss to combine and serve immediately. Serves two as an entrée and 4 as a side.
  6. Store leftovers (dressing separate from salad) covered in the refrigerator for 2-3 days (though best when fresh). Dressing should keep at room temperature for 2-3 days when well sealed.
